Ingredients
  1. 1/2 bunch (about 6) spring onions
  2. 2 eggs, lightly beaten
  3. 1/4 teaspoon freshly ground nutmeg
  4. 1/4 teaspoon salt
  5. Freshly ground pepper
  6. 15g fresh bread crumbs (about 1 slice bread, grated) - Get the Kids to Help!
  7. 500g cold leftover mashed potatoes
  8. 1 tablespoon olive oil
  9. 2 tablespoons vegetable oil
Instructions
  1. Wash and trim the top and bottom off the spring onions, leaving about 2 inches of green stems. Cook in boiling water until tender, about 5 minutes. Drain and chop finely.
  2. Place the spring onions in a medium-sized bowl. Add the eggs, nutmeg, salt and pepper to taste, bread crumbs, and mashed potatoes. Mix well.
  3. Heat the oils in a large non stick pan until hot but not smoking. (Searing the cakes quickly helps them stay together.)
  4. Shape the onion-potato mixture into patties, using 2 rounded tablespoons of the mixture for each patty. Get the Kids to Help!
  5. Sauté, about six at a time, until golden brown on both sides, 2 or 3 minutes per side. Keep warm while sautéing the remaining patties.
  6. Delicious on their own or you can serve with a poached egg on top.
